Beaten Beef Steaks, Cooked in Egg. Otbivnie. Russian Cuisine.

This is the most popular dish in my house, especially if i have guests over. They fly like lightening, everyone loves them. They do take a bit of time to prepare and great consumed both hot and cold. Choice of the beef is very critical part of the dish, you will need to get a beef fillet. Also, non stick frying pan is preferred. They can be made with pork, but i don’t eat pork, and i think with beef they are much juicier and tastier.

I do not use any flour, i believe it adds unnecessary heaviness to the meat, and brief marination with garlic and seasoning is a must. I adore garlic, i add it everywhere possible.)))

My mother thought me, how to make this dish, before she became vegetarian, that means i was around 10…


Beef- 1kg/2.2 pounds of beef fillet, or as much as you need, just adjust the quantities.

Eggs- 2-3 raw eggs, beaten.

Salt, black pepper,- 1 teaspoon each.

Garlic- 4-5 cloves, finely grated or mashed.

Oil for frying.


Slice beef fillet in to 1cm/o.4 inches pieces. Smash each piece with a hammer on both sides.

Each piece season with salt and pepper, then rub crushed garlic and let it rest for 30-45 minuets.

Heat an oil in a non stick frying pan.

Dip each piece of fillet into the the egg mixture and place on a pan. Do not overcrowd the pan. When the steaks have no blood then they are done. Take them on a plate, lined with a paper towel. You should wash the pan, after frying two loads of steaks in it, as it will have too much residue as leftover garlic and eggs.

Great served with mashed potatoes and salads.
