Black Bean and Sweet Potato Cakes/Patties.

Melting in a mouth patties, great hot and cold, with a dip or  without.

Beans have to be soaked overnight for the best outcome.


Black Beans- 1 cup, when cooked.

Sweet potato – 1 medium sized, peeled and cut into chunks.

Fresh Cilantro- 1/3 cup.

Garlic- 2-3 cloves, roughly chopped.


Rice flour- 2 tablespoons and more for dusting.

Salt, pepper.



Soak the beans overnight. Drain, rinse and cook till soft (around 45 minuets). When ready drain and rinse them again, and let cool completely.

Place sweet potato on a baking tray, lined with foil, season with salt, pepper, dry thyme and drizzle with olive oil. Bake at 220C till golden in places. Take the potato out of the oven and mash with a fork, let it cool.

Mix all ingredients together, form patties, roll them in a rice flour and fry in shallow oil, till nice and golden on both sides.
