Bourekas with beef, or cheese, eggs and spring onion.

These, are available in lots of different cuisines with their own versions.


For the dough:

Butter- 1/2 cup, chopped

Flour- 3 cups

Baking powder- 1/2 teaspoon

Hot water- 1 cup.

For the beef filling:

Minced beef- 500 g

Onion- 1 chopped

Salt, pepper

For a cheese filling:

Mix 5 boiled chopped eggs, 1/2 cup of a grated cheese and 1/2 cup of chopped spring onion. Season with salt and pepper.

Oil for frying.


Mix flour, baking powder and butter with your hands, to a bread crumbs consistency.

Add a cup of boiled water, use a fork to mix in, as the mixture going to be very hot.

Kneed it to a ball, cover with a towel and let it rest for 1 hour.


Meantime prepare the filling. heat an oil on a frying pan, add onion, cook till translucent, add minced beef, season  and cook, till all the water evaporated.

Dust the table surface with a flour, pinch a ball size piece  of dough and roll it into a flat circle, 13-15 cm in diameter.

Place a couple of spoons of stuffing on one side and cover with another side. Run a fork along the edges , to make markings.

Fry in a shallow fry, turning when, browned and cooking till golden brown and with crispy edges.
