Calamari Rings, Balinese style.

Ingredients:

4 calamari tubes, cut in 1 cm, rings.

1 cup of a flour

1/2 cup of a corn flour

5 cloves of garlic, chopped

3 shallots, sliced

3 Chilli, sliced

1 tomato chopped

1 cube of a chicken stock

Pinch of sugar.

1/2 cm piece of a shrimp paste

Juice of a half of lime

Fresh coriander chopped.

Salt, pepper to taste

Oil for frying

Directions:

Mix flours together with some salt and coat the calamari in it. Set aside for 30 min.

Heat an oil in a medium pan, cook calamari in batches, set aside.

In a pan add 2 tablespoons of oil, add garlic, shallots and chillies. Cook til softened, add a shrimp paste, stir it in, add tomato, sugar, salt and a chicken cube. Mix all in.

Finally squeeze the lime juice in and add the calamari in to a pot.

Coat the calamari gently in a sauce, sprinkle with a fresh coriander and serve.
