Cauliflower with eggs.

This is incredibly simple, tasty and affordable vegetarian dish.


Cauliflower- 1/2 a head broken into florets.

Eggs- 2 large



Boil or steam cauliflower, till almost done, but not done, otherwise it will break. Drain.

Beat 2 eggs in a bowl, add salt and pepper to taste.

Heat the oil in a skillet. Dip each floret in an egg mixture and slightly fry on each side till just brown.

You will probably need to cook couple of batches, depending on a side of the skillet.

Take it out on a plate, best eaten straight away. Enjoy!
