Causa. Peruvian Cuisine.

AADCB907-1863-4940-A592-F5D519DB955EI am at the moment in Peru, and was lucky to stay at the hotel in Pisac, Melissa Wasi, that owned by a wonderful couple Joyce and Chito. An they were very kind to ask their chef to teach me how to make this very tasty dish “Causa”. It’s a potato based dish, that can be made vegetarian or with meat. This is a vegetarian version.


Red skin, yellow inside potatoes-1kg.

Agi chilies-4 pieces, seeded.


Avocado-1 piece, diced.

Mushroms-150 g chopped

Garlic-2 cloves, smashed and chopped

Onion- 1/2 chopped

Juice of 3 limes

Salt, white pepper to taste.


Boil potatoes with skin till soft. Peel and mash them.

Agi chilli boil in a water for 10 minutes. Then peel the ski off and grind in a mixer with a little corn oil till smooth paste.

Heat an oil in a pan, add garlic, then onion, after 30 seconds add mushrooms. Cook till all water evaporates. Set aside.

Now start adding to your mashed potatoes some chili mixture and some lime juice, keep on mixing. Add some salt and white pepper. Continue adding chili and juice according to your taste.

then prepare a container. Lay some potato mixture followed by mushrooms, then avocado. Repeat the layers . Turn over the container and decorate.

Causa is ready.
