Coxinha. Brazilian chicken croquettes.

These are insanely delicious, I would love you to try them. The dough is just magical and such a pleasure to work with.


For the stuffing:

1 onion very finely chopped.

5 garlic clove, finely chopped

2 cups of shredded chicken.

1 teaspoon of smoked paprika

1/2 cup of parsley.

120 g of cream cheese

Salt to taste

Olive oil

For the dough:

1 tablespoon of butter

2 cups of milk

1/4 cup of a chicken broth

2 1/4 cups of flour

  • 1/2 teaspoon of salt
  • Panko crumbs
  • 3 eggs beaten


Heat an oil in a large frying pan add onion and garlic.

Cook, whilst stirring constantly, add paprika, stir, add chicken, stir.

Take it off the heat and add cream cheese and parsley. Mix very well.

Heat the pan, add butter , milk , salt and broth

  • Get it to the boiling point, switch off the heat and add flour. Stir it in to your best ability and take it on to a board. As soon as it becomes possible to handle, nit it to a fine dough.

Pinch a small ball size of dough, flatten it with a palm of your hand add a chicken mixture and a little of a cream cheese. Tie it all up to a cone shaped croquettes.

Heat 2 litres of oil in a large pot.

Roll each coxhina in an egg mixture and then in a panko crumbs mixture.

Put the coxhinas in the oil, and cook till nice golden brown colour.

Take it out on a paper lined dish.
