Duck with Eggplant and Potatoes.

I got a fresh duck today, yayyyy, i know it’s funny but getting a fresh duck in Perth is quite a challenge …Anyway, i am making it with veggies and spices, hot and hot!


Duck- 2kg.

Potatoes- 4 medium, cut in quarters .

Egg plant- 1 diced.

Onion- 2 chopped.

Garlic- 6 cloves, chopped.

Chillies- 3 red, chopped.

Oregano – 2 tablespoons, chopped.

Tomatoes- 4 medium sized , cut in wedges.

Smoked paprika 1 teaspoon.



Heat an oil in a pan and add duck pieces, cook till browned.

Het a large pot, and add duck pieces into it.

Set aside, to the same pot add onion , cook for a couple of minuets, add garlic, cook for a further minute .Add potatoes and smoked paprika, cook till potatoes are slightly browned.

Add to a large pot.

To the same frying pan add egg-plants and cook till fragrant, add to a pot.

To the same frying pan add chillies, oregano and tomatoes cook for a couple of minuets.

Add to a pot with a duck and the rest.Cook for an hour with a lid closed.
