Red Curry of Duck with Pinapple and Lychees. Thai Cuisine.

Seriously delicious and unique dish. The combination of duck meat and Pinapple with lychees is really something special. Best served with jasmine rice.


Duck whole- cut in pieces.

Red curry paste- 3 tablespoons.

Coconut milk- 1 can.

Fish sauce -2 tablespoons.

Kaffir lime leaves-3 pieces.

Palm sugar- 1 teaspoon grated.

Fresh Pinapple – 1 cup cored and cut in cubes.

Lychees fresh or tinned- 1 cup.

Basil to serve.



Heat an oil in a wok or a heavy based pan.

Add the duck and cook in batches, till browned on all sides. Set aside.

Add the curry paste and stir for couple of minuets till bubbles. Add coconut milk, fish salt and kaffir leaves. Wait until bubbles and add duck pieces.

Cook turning occasionally for 45 minuets on a low heat.

Add Pinapple , palm sugar and lychees, stir , heat through.

Garnish with fresh basil.
