Russian Salad “Olivye” with Chicken.

Traditionally this salad is made with “kolbasa”, some sort of salami, but beef and chicken are used as well.

I always make it with chicken. Also, normally russians, are boiling whole potatoes and carrots with a skin on, that i find unreasonable, as peeling them prior to boiling makes much more sense.

Corn is not normally added, but i like to add it to my salad, as kids really like it.

Try to cut all the ingredients around the same size.


Potatoes- 6 medium.

Carrots- 3 medium.

Chicken- 1/2 boiled.

Gherkins- 1/2 cup.

Cucumber- 1 long.

Eggs- 6-8 boiled.

Green peas- 1 tin, drained.

Corn- 1 tin, drained.

Mayonaise- 1 cup.

Salt, pepper to taste.


Prepare a large container, where, you are going to put the salad.

Peel and boil potatoes and carrots, let them cool completely.

Boil the chicken, let it cool, and chop into bite size pieces.

Peel and cut cucumber, chop gherkins .

Boil the eggs, cool, and chop.

Now start assembling. Put all prepared ingredients into a container, add mayo, salt and pepper, and it’s done.
